Lately I have using my crockpot a lot and love it! I have had a great sense of freedom throughout my day knowing that my dinner was slowly simmering away in the kitchen. When meal time comes I add a salad, set the table and my family and I sit down to a delicious meal. Happy St. Pat's Day a little early! I'm working most of the weekend including Monday but I wanted to share this meal with you. Yum! St. Pat's food is one of my favorite go to for celebratory meals. Don't know why I don't prepare it more often. Actually, the Reuben is my all time favorite sandwich and corned beef hash and eggs is my favorite breakfast. Can't go wrong with corned beef and cabbage in any form! By the way, the green bread is a joke. It's simply my standard white bread

I love brisket! But it has been only recently that I have entertained the idea of making it myself. I don't know why it never occured to me to try cooking it, but it always seemed like a delicious mystery. I've been making familiar dishes and new things recently everything in the crockpot because morning is just so much easier for prep than late afternoon. And the kiddos like very little of any of it.
